Homemade Butter Pecan Ice Cream Recipe

1 cup pecans, coarsely chopped

1/2 cup unsalted butter

1 1/2 cups heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

6 egg yolks

Instructions
 

Toast the Pecans: In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped pecans and toast until they are golden and fragrant, about 5-7 minutes. Remove from heat and set aside to cool.

    Make the Base: In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, vanilla extract, and salt. Heat over medium heat until the mixture is warm but not boiling.

      Prepare the Egg Yolks: In a separate bowl, whisk the egg yolks. Gradually pour about 1 cup of the warm cream mixture into the egg yolks, whisking constantly to temper the yolks. Then, pour the egg mixture back into the saucepan with the remaining cream mixture.

        Thicken the Mixture: Cook the mixture over low heat, stirring constantly until it thickens and coats the back of a spoon (about 8-10 minutes). Make sure not to let it boil.

          Incorporate Butter: Remove from heat and stir in the remaining melted butter. Allow the mixture to cool to room temperature.

            Chill the Base: Transfer the mixture to a bowl, cover, and refrigerate for at least 4 hours or until completely chilled.

              Churn the Ice Cream: Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. In the last 5 minutes of churning, add the toasted pecans.

                Freeze: Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.

                  Serve and Enjoy: Scoop into bowls or cones, sprinkle with additional toasted pecans if desired, and indulge in your homemade butter pecan ice cream!
