1 cup buttermilk (or milk mixed with 1 tablespoon lemon juice)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup all-purpose flour

1 cup breadcrumbs (panko recommended for extra crunch)

1 teaspoon dried herbs (like parsley or oregano)

Oil for frying (vegetable or canola)

Marinate the Chicken: In a large bowl, combine the buttermilk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the chicken pieces, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 1 hour (up to overnight for more flavor).

    Prepare the Breading Station: Set up a breading station with three bowls. In the first bowl, place the flour; in the second bowl, pour in the remaining buttermilk; and in the third bowl, mix the breadcrumbs with dried herbs.

      Bread the Chicken: Remove the chicken from the marinade. Dredge each piece in the flour, shaking off any excess. Dip it into the buttermilk again, then roll it in the breadcrumb mixture, pressing lightly to ensure the crumbs adhere well.

        Heat the Oil: In a deep skillet or frying pan, pour in enough oil to cover the bottom (about 1/2 inch). Heat the oil over medium-high heat until it reaches 350°F (175°C). To check if it’s ready, drop a small piece of breadcrumb into the oil; it should sizzle and rise to the surface.

          Fry the Nuggets: Carefully add the breaded chicken pieces to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
