Ingredients
  

1 ½ cups cream cheese, softened

1 cup granulated sugar

1 cup heavy cream

½ cup whole milk

½ cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 2 lemons

1 teaspoon vanilla extract

Pinch of salt

½ cup crushed graham crackers (for topping)

Fresh lemon slices (for garnish, optional)

Instructions
 

In a medium mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    Gradually add the granulated sugar while continuing to beat until thoroughly combined and fluffy.

      In another bowl, mix the heavy cream and whole milk. Slowly pour this mixture into the cream cheese mixture, blending until smooth.

        Add the freshly squeezed lemon juice, lemon zest, vanilla extract, and a pinch of salt to the mixture. Beat until everything is well combined and the mixture is silky.

          Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

            If you want a crunchy cheesecake element, gently fold in half of the crushed graham crackers into the churned ice cream before transferring it to an airtight container.

              Freeze the ice cream for at least 4 hours or until firm.

                When ready to serve, scoop the ice cream into bowls and sprinkle the remaining crushed graham crackers on top. Optionally, garnish with fresh lemon slices.
