4 ripe peaches, peeled, pitted, and diced

1 cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy cream

1 cup whole milk

1 tablespoon lemon juice

1/4 teaspoon salt

Optional: 1/2 teaspoon almond extract for extra flavor

Prepare the Peaches: In a bowl, combine the diced peaches with half of the sugar (1/2 cup). Gently toss and let them sit for about 30 minutes to allow the juices to release.

    Blend the Peach Mixture: After the peaches have released their juices, transfer them to a blender or food processor. Blend until smooth, but leave some small chunks for texture if desired. Set aside.

      Mix the Base: In a large mixing bowl, whisk together the remaining sugar (1/2 cup), heavy cream, whole milk, vanilla extract, lemon juice, salt, and almond extract (if using) until well combined.

        Incorporate the Peaches: Fold the blended peach mixture into the cream mixture until everything is well combined and the color is uniform.

          Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the peach ice cream base for at least 2 hours, or until it's thoroughly chilled. This step enhances the flavors.

            Churn the Ice Cream: Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions (typically 20-25 minutes) until it reaches a soft-serve consistency.
