Ingredients
  

1 cup fresh fruit (berries, citrus, or mango)

1/2 cup sugar (or to taste)

1 cup water

1 teaspoon vanilla extract

2 tablespoons freshly squeezed lemon or lime juice

Sparkling water or club soda

Ice cubes

Fresh herbs (mint or basil) for garnish

Instructions
 

In a small saucepan, combine the fresh fruit, sugar, and water. Heat over medium heat until the mixture comes to a gentle simmer, stirring occasionally.

    Once the mixture starts boiling, reduce the heat and let it simmer for about 10 minutes, or until the fruit has softened and the sugar has dissolved completely.

      Remove the saucepan from heat, and let the mixture cool slightly. Then, strain the mixture through a fine mesh strainer into a clean bowl, pressing the solids to extract as much liquid as possible. Discard the leftover fruit pulp.

        Stir in the vanilla extract and lemon or lime juice to the strained fruit syrup. Adjust sweetness as needed by adding more sugar.

          To serve, fill a glass with ice cubes, then pour about 1/4 cup of the homemade fruit syrup over the ice. Top off with sparkling water or club soda to taste.

            Garnish with fresh herbs and a slice of fresh fruit if desired. Stir gently and enjoy your refreshing fizzy drink!
