1 celery stalk, finely diced

1 bell pepper (red or yellow), diced

1 (28-ounce) can crushed tomatoes

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon sugar

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional for heat)

1/4 cup fresh basil leaves, chopped (for garnish)

Grated Parmesan cheese (for serving)

Sauté the Aromatics: In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant.

    Add the Vegetables: Incorporate the diced carrot, celery, and bell pepper into the saucepan. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

      Stir in the Tomatoes: Add the crushed tomatoes and tomato paste to the saucepan. Mix well to combine all the ingredients.

        Season the Sauce: Add dried oregano, dried basil, sugar, salt, and pepper to taste. If you like a bit of heat, sprinkle in the red pepper flakes.

          Simmer the Sauce: Bring the sauce to a gentle simmer, then reduce the heat to low. Cover partially and let it simmer for about 30-45 minutes, stirring occasionally. This will allow the flavors to meld beautifully.
