1 cup (226g) cream cheese, softened

1 cup (200g) granulated sugar

1/2 cup (115g) unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

2 cups (250g) all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup (150g) fresh strawberries, hulled and diced

1/4 cup (60ml) milk

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper for easy removal.

    Cream Cheese Mixture: In a large mixing bowl, beat together the softened cream cheese, butter, and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-5 minutes.

      Incorporate Eggs and Vanilla: Add the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract until well combined.

        Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the cream cheese mixture, alternating with the milk. Begin and end with the flour mixture, mixing just until incorporated.

          Add Strawberries: Gently fold the diced strawberries into the batter, being careful not to overmix.

            Bake the Cake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

              Cool Down: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
