For the Wontons:

1 cup ground pork (or chicken)

1/2 cup shrimp, chopped finely

2 green onions, finely chopped

1 tablespoon ginger, minced

2 teaspoons soy sauce

1 teaspoon sesame oil

1 teaspoon cornstarch

1 package wonton wrappers (about 48 wrappers)

Salt and pepper to taste

For the Broth:

6 cups chicken broth

2 cloves garlic, minced

1 piece of ginger (1 inch), sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 teaspoon white pepper

1 bunch bok choy, roughly chopped

1 cup mushrooms, sliced (shiitake or button)

2 green onions, sliced (for garnish)

For the Noodles:

8 oz fresh egg noodles (or dried, cooked according to package instructions)

Instructions
 

Prepare the Wontons:

    - In a mixing bowl, combine the ground pork, shrimp, green onions, ginger, soy sauce, sesame oil, cornstarch, salt, and pepper. Mix well until all ingredients are thoroughly combined.

      - Take a wonton wrapper and place about 1 teaspoon of the filling in the center. Wet the edges of the wrapper with a bit of water using your finger.

        - Fold the wrapper in half to create a triangle, pressing out any air. Then, take the two top corners of the triangle and bring them together, sealing them with a bit of water. Repeat until all filling is used.

          Make the Broth:

            - In a large pot, heat a little oil over medium heat. Add minced garlic and sliced ginger, sautéing until fragrant (about 1 minute).

              - Pour in the chicken broth, soy sauce, oyster sauce, and sesame oil. Bring to a simmer and let cook for 10 minutes to allow flavors to meld.

                - Add the bok choy and mushrooms to the broth. Let it simmer for another 5 minutes until the greens are tender.

                  Cook the Wontons:

                    - In a separate pot, bring water to a gentle boil. Drop the wontons into the boiling water in batches, being careful not to overcrowd the pot. Cook for about 4-5 minutes or until they float to the top and are cooked through. Remove with a slotted spoon and set aside.

                      Prepare the Noodles:

                        - If using fresh egg noodles, cook according to the package instructions. Drain and set aside. If using dried noodles, cook them according to the instructions on the packaging.

                          Assemble the Soup:

                            - In serving bowls, place a portion of the cooked noodles. Top with wontons, and ladle the hot broth and vegetables over the noodles.

                              - Garnish with sliced green onions. Serve hot and enjoy!
