Ingredients
  

For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1/2 teaspoon ground cinnamon

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1/2 cup honey

For the Topping:

1 cup powdered sugar

2 tablespoons milk

1 teaspoon vanilla extract

1/4 cup chopped pecans (optional)

1 tablespoon ground cinnamon mixed with 2 tablespoons brown sugar

Instructions
 

Prepare the Crust:

    - Preheat the oven to 325°F (163°C).

      - In a medium bowl, combine graham cracker crumbs, granulated sugar, melted butter, and ground cinnamon. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes. Remove from the oven and allow to cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add sugar and honey, mixing until fully incorporated. Scrape down the sides of the bowl as necessary.

                - Add the vanilla extract and mix until combined.

                  - Add the eggs, one at a time, mixing on low speed until just combined; do not overmix.

                    - Fold in the sour cream gently until the mixture is smooth.

                      Combine and Bake:

                        - Pour the cheesecake filling over the cooled crust, spreading it evenly.

                          - In a small bowl, mix together the brown sugar and cinnamon topping. Sprinkle this mixture evenly over the cheesecake.

                            - Bake in the preheated oven for 55-65 minutes, or until the center is just set and slightly jiggly.

                              Cool and Chill:

                                - Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. This prevents cracking.

                                  - Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

                                    Prepare the Topping:

                                      - In a small bowl, combine powdered sugar, milk, and vanilla extract until smooth. If too thick, add a little more milk to achieve drizzling consistency.

                                        - Before serving, drizzle the glaze over the top of the cheesecake and sprinkle with chopped pecans if desired.

                                          Serve:
