1 pound boneless, skinless chicken thighs

2 tablespoons honey

2 tablespoons chipotle chili powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper, to taste

1 cup uncooked jasmine rice (or brown rice)

2 cups chicken broth (or water)

1 can black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 avocado, sliced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Optional: shredded cheese (Cheddar or Cotija), sour cream, or Greek yogurt for topping

Instructions
 

Marinate the Chicken: In a medium bowl, mix honey, chipotle chili powder, garlic powder, smoked paprika, olive oil, salt, and pepper. Add the chicken thighs, making sure they are well-coated in the marinade. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until all the liquid is absorbed. Remove from heat and let it sit, covered, for 10 minutes.
