Ingredients
  

2 cups broccoli florets, blanched

1 large Honey Crisp apple, chopped (core removed)

1/2 cup red grapes, halved

1/3 cup walnuts, toasted and roughly chopped

1/4 cup dried cranberries

1/2 cup shredded sharp cheddar cheese

1/4 cup plain Greek yogurt

2 tablespoons honey

1 tablespoon apple cider vinegar

1 tablespoon lemon juice

Salt and pepper, to taste

Prepare the Broccoli: Bring a pot of water to a boil and add the broccoli florets. Blanch for 1-2 minutes until bright green, then immediately transfer them to an ice bath to halt the cooking process. Once cooled, drain and set aside.

    Chop the Ingredients: In a large mixing bowl, combine the chopped Honey Crisp apple, halved red grapes, toasted walnuts, dried cranberries, and cooled broccoli florets.

      Make the Dressing: In a smaller bowl, whisk together the Greek yogurt, honey, apple cider vinegar, lemon juice, and a pinch of salt and pepper. Adjust seasoning to taste.
