Honey-Garlic Chicken Kabobs with Rice

Ingredients
  

1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces

1/3 cup honey

1/4 cup soy sauce (low sodium)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon sesame oil

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into quarters and layers separated

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Salt to taste

Cooked rice (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large mixing bowl, whisk together honey, soy sauce, minced garlic, minced ginger, sesame oil, black pepper, and garlic powder until well combined. Add the chicken pieces to the marinade, stirring to coat. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

    Prepare the Skewers: Preheat your grill or grill pan to medium-high heat. If you’re using wooden skewers, ensure they are soaked in water for at least 30 minutes to prevent burning. Thread the marinated chicken onto the skewers, alternating with pieces of red bell pepper, yellow bell pepper, and onion for color.

      Grilling the Kabobs: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks, and the vegetables are tender. The internal temperature of the chicken should reach 165°F (75°C).

        Serve: Remove the kabobs from the grill and let them rest for a few minutes. Season with salt to taste. Serve the kabobs over cooked rice and garnish with fresh chopped parsley.

          Enjoy! Pair the skewers with additional honey-soy dipping sauce (made with equal parts honey and soy sauce mixed together) for extra flavor, if desired.
