Ingredients

1 lb large shrimp, peeled and deveined

1/4 cup honey

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon fresh lime juice

1 teaspoon ground ginger

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 bell pepper, cut into squares (any color)

1 red onion, cut into wedges

Skewers (wooden or metal, soaked if wooden)

Instructions

In a mixing bowl, whisk together the honey, minced garlic, soy sauce, lime juice, ground ginger, and red pepper flakes until well combined.

Add the shrimp to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld.

While the shrimp marinates, soak wooden skewers in water to prevent burning on the grill (if using metal skewers, you can skip this step).

Preheat the grill to medium-high heat.

Thread the marinated shrimp onto the skewers, alternating with pieces of bell pepper and red onion for added color and flavor.

Season the assembled skewers with salt and pepper to taste.

Place the kabobs on the grill and cook for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through, being careful not to overcook.

Remove the kabobs from the grill and let them rest for a few minutes before serving.

Serve warm, drizzled with any leftover marinade that has been boiled for safety, and garnish with lime wedges and fresh herbs if desired.
