1 lb large shrimp, peeled and deveined

1/4 cup honey

1/4 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

1 cup bell peppers, sliced (any color)

1 cup snap peas, trimmed

1 teaspoon sesame oil

1 tablespoon sesame seeds (for garnish)

Fresh cilantro or green onions (for garnish)

Cooked jasmine rice or quinoa (for serving)

Instructions
 

Prepare the Sauce: In a small bowl, whisk together the honey, soy sauce, minced garlic, and grated ginger. Set aside.

    Sauté the Shrimp: Heat the olive oil in a large skillet or pot over medium-high heat. Once hot, add the shrimp and cook for about 2-3 minutes on each side until they turn pink and are just cooked through. Remove the shrimp from the pot and set aside.

      Stir-Fry Vegetables: In the same pot, add the sliced bell peppers and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

        Combine Everything: Lower the heat and add the honey garlic sauce to the vegetables in the pot. Stir well and let it simmer for about 1-2 minutes until it thickens slightly.

          Return Shrimp to Pot: Add the cooked shrimp back into the pot and toss to coat in the sauce and vegetables. Drizzle with sesame oil, stirring to combine.

            Serve: Serve the honey garlic shrimp over a bed of jasmine rice or quinoa. Garnish with sesame seeds and fresh cilantro or green onions for an extra burst of flavor.
