2 cups heavy cream

1 cup whole milk

3/4 cup honey (preferably local)

2 tablespoons dried culinary lavender buds

5 large egg yolks

1 teaspoon vanilla extract

A pinch of salt

In a medium saucepan, combine the heavy cream, whole milk, and dried lavender. Heat over medium heat until the mixture begins to steam, stirring occasionally. Do not let it boil.

    Remove the saucepan from heat and let the lavender steep in the cream mixture for about 15-20 minutes, allowing the flavors to infuse.

      In a separate bowl, whisk together the egg yolks and honey until well combined and slightly pale in color.

        Strain the lavender-infused cream mixture through a fine mesh sieve into another bowl to remove the lavender buds.

          Gradually add the warm cream mixture to the egg yolks while whisking constantly to temper the eggs. This prevents the yolks from scrambling.

            Pour the combined mixture back into the saucepan and cook over low heat, stirring continuously until it thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.

              Once thickened, remove from heat, stir in the vanilla extract, and add a pinch of salt. Let the mixture cool to room temperature.

                Cover the cooled mixture and refrigerate for at least 4 hours, or overnight for best results.

                  Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

                    Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
