2 tablespoons dried butterfly pea flowers

4 cups boiling water

1/2 cup fresh lemon juice (about 4 lemons)

1/3 cup honey (adjust to taste)

2 cups sparkling water (chilled)

Lemon slices (for garnish)

Fresh mint leaves (for garnish)

Instructions
 

Start by steeping the dried butterfly pea flowers in boiling water. Let them infuse for about 10 minutes until the water turns a deep blue color.

    Strain the liquid to remove the flowers, and then stir in the honey while the tea is still warm, allowing it to dissolve completely.

      Allow the mixture to cool to room temperature, then stir in the fresh lemon juice. This will change the vibrant blue to a beautiful purple hue.

        Chill the mixture in the refrigerator for about 30 minutes.

          Once chilled, fill serving glasses with ice cubes, then pour the butterfly lemon mixture until each glass is about two-thirds full.

            Top off each drink with chilled sparkling water for fizz, and give it a gentle stir to combine.

              Garnish with lemon slices and fresh mint leaves before serving.
