Ingredients

4 boneless, skinless chicken breasts

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

2 tablespoons apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Marinade: In a medium bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, and paprika until well combined.

Marinate the Chicken: Place the chicken breasts in a zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all sides are coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C).

Bake the Chicken: Remove the chicken from the marinade (reserve the marinade for later). Place the chicken breasts in a baking dish and season with salt and pepper. Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Glaze the Chicken: While the chicken is baking, pour the reserved marinade into a small saucepan. Bring it to a simmer over medium heat and cook for about 5-7 minutes until slightly thickened.

Serve: Once the chicken is done baking, glaze it generously with the thickened marinade. Garnish with freshly chopped parsley for a pop of color and flavor.

Enjoy: Serve the honey mustard chicken with your favorite sides, such as roasted vegetables or mashed potatoes.
