Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup sour cream

1 cup fresh peaches, diced

1 tsp honey (plus extra for drizzling)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

1-2 tbsp milk (as needed for consistency)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.

Prepare Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Incorporate Sour Cream: Blend in the sour cream until fully combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing just until no flour streaks remain. Do not overmix.

Fold in Peaches and Honey: Gently fold in the diced peaches and 1 tsp of honey until evenly distributed throughout the batter.

Fill the Cupcake Liners: Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow them to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Make the Cream Cheese Frosting: In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar, mixing until fully combined. Stir in the vanilla extract and add milk to achieve your desired frosting consistency.

Frost the Cupcakes: Once the cupcakes are completely cooled, frost them with the cream cheese frosting.

Drizzle with Honey: Top each frosted cupcake with a light drizzle of honey for added sweetness and decoration.
