1 teaspoon vanilla extract

⅔ cup buttermilk

1 cup finely chopped fresh peaches (peeled)

½ cup unsalted butter, softened

1 cup powdered sugar

1/4 cup honey

1 teaspoon vanilla extract

Pinch of salt

For Garnish:

Extra peach slices and a drizzle of honey

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Pour in the vanilla extract and continue to mix.

Incorporate Dry Ingredients and Buttermilk: Gradually add the flour mixture to the creamed butter mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined. Be careful not to overmix.

Fold in Peaches: Gently fold in the chopped peaches until evenly distributed throughout the batter.

Fill Cupcake Liners: Scoop the batter into the cupcake liners, filling each about two-thirds full.

Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Prepare Frosting: In a mixing bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar until combined, then add the honey, vanilla extract, and a pinch of salt. Continue to mix until fluffy.

Frost the Cupcakes: Once the cupcakes are completely cool, frost them using a piping bag or a spatula.

Garnish: Top each frosted cupcake with a slice of peach and a drizzle of honey for an extra touch of sweetness.
