1 lb large shrimp, peeled and deveined

1 cup walnuts

1/2 cup mayonnaise

1/4 cup honey

1 tablespoon sweetened condensed milk

1 teaspoon lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 cup all-purpose flour

1/2 cup cornstarch

Vegetable oil, for frying

2 cups cooked jasmine rice (for serving)

Green onions, chopped (for garnish)

Instructions
 

Prepare the Walnuts: In a small saucepan, bring 1 cup of water to a boil. Add the walnuts and boil for about 2-3 minutes to soften them. Drain the walnuts, then return them to the pot and add 1 cup of sugar and 1/2 cup of water. Bring them to a simmer and cook until the liquid thickens and the walnuts are glossy, about 5-10 minutes. Remove the walnuts with a slotted spoon and place them on parchment paper to cool.

    Prepare the Shrimp: In a bowl, combine the shrimp, salt, pepper, and garlic powder. Toss well to coat the shrimp evenly.

      Batter the Shrimp: In a shallow dish, mix the all-purpose flour and cornstarch. Dredge each shrimp in the flour mixture, shaking off the excess.

        Fry the Shrimp: In a large, deep skillet or wok, heat 2 inches of vegetable oil over medium-high heat. Once the oil reaches 350°F (175°C), carefully add the battered shrimp in batches, cooking until they are golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and place on paper towels to drain excess oil.

          Make the Sauce: In a medium bowl, combine the mayonnaise, honey, sweetened condensed milk, and lemon juice. Whisk until smooth and creamy.

            Combine Everything: In a large bowl, toss the fried shrimp with the creamy honey sauce until well coated.

              Serve: Serve the honey walnut shrimp over a bed of jasmine rice, topped with the candied walnuts and chopped green onions for garnish.
