Ingredients

1 cup all-purpose flour

1 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup unsweetened cocoa powder

1/2 cup milk

1/3 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

1 cup packed brown sugar

1/3 cup additional unsweetened cocoa powder

1 cup hot water

Instructions

Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.

In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and ½ cup cocoa powder until combined.

Add the milk, vegetable oil, and vanilla extract to the dry ingredients and mix until smooth.

Pour the batter into the prepared baking dish.

In a separate bowl, mix the brown sugar and 1/3 cup cocoa powder together. Sprinkle this mixture evenly over the batter in the baking dish.

Carefully pour the boiling water over the top (do not stir). This will create a fudgey layer at the bottom as it bakes.

Bake in the preheated oven for 30-35 minutes, or until the cake is set and a toothpick inserted in the cake portion comes out clean.

Let the cake cool for about 10 minutes before serving. It will be hot and pudding-like at the bottom.

Serve warm, optionally topped with whipped cream or vanilla ice cream for an extra indulgent treat!
