Ingredients

1 lb chicken thighs, boneless and skinless

1/4 cup hot honey (store-bought or homemade)

1 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

2 cups cooked rice (white or brown)

1 cup broccoli florets (fresh or frozen)

1 cup corn kernels (canned or frozen)

1 avocado, sliced

2 green onions, sliced for garnish

Fresh cilantro, chopped (optional)

Instructions

Marinate the Chicken: In a large bowl, combine the chicken thighs, hot honey, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well, ensuring the chicken is evenly coated. Allow it to marinate for at least 30 minutes to infuse the flavors.

Cook the Chicken: Heat a skillet over medium-high heat. Once hot, add the marinated chicken thighs. Cook for about 5-7 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and let it rest for a few minutes before slicing.

Prepare the Vegetables: In the same skillet, add the broccoli and corn. Sauté on medium heat for about 5-6 minutes until the broccoli is tender and vibrant in color. Season lightly with salt and pepper.

Assemble the Bowls: In each bowl, add a generous scoop of the cooked rice. Top with sliced chicken, sautéed broccoli, corn, and avocado slices. Drizzle with additional hot honey if desired for an extra kick.

Garnish and Serve: Finish your bowls by sprinkling sliced green onions and chopped cilantro over the top. Serve hot and enjoy your Spicy Sweet Hot Honey Chicken Bowls!
