Ingredients

1 cup unsalted butter

2 cups packed brown sugar

1 cup granulated sugar

1 cup heavy cream

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional toppings: sea salt flakes, nuts, or chocolate chips

Instructions

Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, allowing some overhang for easy removal later. Lightly grease the parchment with a bit of butter or cooking spray.

Melt the Butter: In a medium saucepan, melt the butter over medium heat. Once melted, reduce the heat to low.

Add Sugars: Stir in the brown sugar and granulated sugar, mixing well until fully combined.

Incorporate Cream: Gradually add the heavy cream while stirring continuously. Bring the mixture to a gentle boil, then reduce the heat to medium-low.

Cook the Mixture: Allow the mixture to simmer without stirring for about 5-7 minutes, or until it reaches a temperature of 234°F to 240°F (soft ball stage) on a candy thermometer. This temperature is critical for achieving the perfect fudge consistency.

Add Flavorings: Once the desired temperature is reached, remove from heat. Carefully stir in the vanilla extract and salt.

Pour into Pan: Quickly and carefully pour the caramel mixture into the prepared baking dish. Smooth the top with a spatula if needed.

Add Toppings (Optional): If desired, sprinkle sea salt flakes or any other toppings like nuts or chocolate chips on top before it sets.

Cool and Set: Let the fudge cool at room temperature for about 2 hours, or until it's completely set. For faster setting, you can place it in the refrigerator.

Slice and Serve: Once cool, use the parchment overhang to lift the fudge from the pan. Cut into squares and enjoy this rich, creamy delight!
