Ingredients
  

2 lbs bone-in, skin-on chicken thighs (or breasts)

1 cup pineapple juice

1/2 cup soy sauce (low sodium recommended)

1/4 cup brown sugar

1/4 cup honey

4 cloves garlic, minced

1-inch piece ginger, grated

2 tbsp rice vinegar

1 tsp sesame oil

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional, for heat)

Chopped green onions and sesame seeds for garnish

Pineapple slices for grilling (optional)

Instructions
 

Prepare the Marinade: In a large bowl, whisk together the pineapple juice, soy sauce, brown sugar, honey, minced garlic, grated ginger, rice vinegar, sesame oil, black pepper, and red pepper flakes until the sugar is dissolved.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours (or ideally overnight for better flavor).

      Preheat the Grill: Preheat your grill to medium-high heat. If using charcoal, prepare it until the coals are glowing red and covered with white ash.

        Grill the Chicken: Remove the chicken from the marinade, letting excess liquid drip off. Reserve the marinade for basting. Place the chicken skin side down on the grill. Grill for about 6-8 minutes, then flip.

          Baste and Continue Grilling: Brush the chicken with the reserved marinade and continue grilling for another 6-8 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). If you’re using pineapple slices, toss them on the grill during the last few minutes to caramelize them.

            Rest the Chicken: Once done, remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.

              Serve: Garnish with chopped green onions and sesame seeds. Serve with the grilled pineapple slices and a side of rice or a fresh salad.
