1 cup fresh spinach, chopped

Prepare the Flank Steak: Begin by placing the flank steak between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound the steak to an even thickness of about ½ inch. This will help it cook evenly and make it easier to roll.

    Marinate the Steak: In a small bowl, whisk together olive oil, minced garlic, salt, black pepper, and smoked paprika. Rub the marinade all over the pounded flank steak. Cover it with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Prepare the Filling: In a mixing bowl, combine the chopped spinach, sun-dried tomatoes, feta cheese, and fresh basil. Mix well to combine.

        Assemble the Roulade: Preheat your oven to 375°F (190°C). Once marinated, lay the flank steak flat on a clean surface, with the grain running horizontally. Spread the filling mixture evenly over the surface of the steak, leaving a small border around the edges.
