Instant Pot Beef Stew That Falls Apart Tender

This instant pot beef stew that falls apart tender is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

2 lbs beef chuck, cut into 1-inch cubes

3 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

4 medium carrots, sliced

3 medium potatoes, diced

2 cups beef broth

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

2 tablespoons cornstarch (optional for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: Set the Instant Pot to Sauté mode. Add the olive oil, and once hot, add the diced beef cubes. Season with salt and pepper. Sear the beef for about 4-5 minutes until browned on all sides. You may need to do this in batches to avoid overcrowding. Remove beef and set aside.

    Sauté the Vegetables: In the same pot, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent. Scrape up any browned bits from the bottom of the pot for extra flavor.

      Add Remaining Ingredients: Add the carrots, potatoes, seared beef, beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf to the pot. Stir well to combine.

        Pressure Cook: Close the lid of the Instant Pot and make sure the vent is sealed. Set the Instant Pot to Manual or Pressure Cook mode for 35 minutes.

          Natural Release: Once cooking is complete, allow the Instant Pot to do a natural pressure release for about 10-15 minutes. After that, carefully turn the vent to quick release the remaining steam.

            Thicken the Stew (Optional): If you prefer a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water to create a slurry. Turn the Instant Pot back to Sauté mode, stir in the slurry, and cook for another 2-3 minutes until the stew thickens.

              Serve: Taste and adjust seasonings if necessary. Discard the bay leaf. Ladle the stew into bowls and garnish with chopped fresh parsley.
