Ingredients
  

1 cup full-fat coconut milk

1 ripe mango, peeled and diced

1/4 cup honey or maple syrup (to taste)

1 tsp vanilla extract

1 gelatine sheet (or 1 tsp agar-agar for a vegetarian option)

1 tablespoon water (for blooming gelatin)

Pinch of salt

Fresh mint leaves (for garnish)

Instructions
 

Bloom the Gelatin: If using gelatine, soak the gelatine sheet in cold water for about 5 minutes until softened. If using agar-agar, mix with 1 tablespoon of cold water and let it sit for 10 minutes.

    Prepare the Coconut Base: In a medium saucepan, gently heat the coconut milk over low heat. Stir in the honey or maple syrup and the vanilla extract.

      Dissolve Gelatin/Agar-Agar: Once the coconut milk mixture is warm (but not boiling), squeeze the excess water from the gelatine and add it to the saucepan. If using agar-agar, add the agar mixture directly to the coconut milk. Stir continuously until fully dissolved. Remove from heat and allow to cool slightly.

        Blend Mango: In a blender, combine the diced mango with a pinch of salt and blend until smooth.

          Combine Mixtures: Once the coconut mixture has cooled slightly, fold in the mango puree until you achieve a uniform color. Taste and adjust sweetness if necessary.

            Set the Mousse: Divide the mixture into serving glasses or bowls and refrigerate for at least 2-4 hours or until set.

              Serve: Once set, garnish with fresh mint leaves. Optionally, you can top each mousse with additional diced mango or coconut flakes for an extra flair.
