1 lb ground beef (80/20 for optimal juiciness)

1/2 cup Irish cheddar cheese, shredded

1/4 cup diced red onion

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

Salt and pepper to taste

4 brioche buns, toasted

1/2 cup Guinness stout (optional for marinade)

8 slices of crispy bacon

Lettuce leaves and tomato slices for topping

1/2 cup homemade or store-bought Irish stout sauce (see below for quick recipe)

Irish Stout Sauce (Optional):

1/2 cup Guinness stout

1 tablespoon brown sugar

1 teaspoon Dijon mustard

1/4 teaspoon garlic powder

Salt and pepper to taste

Prepare the Irish Stout Sauce: In a small saucepan, combine the Guinness, brown sugar, Dijon mustard, garlic powder, salt, and pepper. Bring to a simmer over medium heat, stirring frequently. Let it reduce for about 10-15 minutes until slightly thickened. Set aside.

    Make the Burger Patties: In a large bowl, combine the ground beef, shredded Irish cheddar, diced red onion, minced garlic, chopped parsley, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix gently until well combined. Form the mixture into 4 equal-sized patties.

      Marinate (Optional but recommended): For an extra kick, you can marinate the patties in Guinness stout for about 30 minutes prior to cooking. This is optional for enhancing flavor.

        Cook the Burgers: Preheat a grill or skillet over medium-high heat. If using a skillet, add a little oil to prevent sticking. Grill or pan-fry the burger patties for about 4-5 minutes on each side for medium doneness. A few minutes before they’re done, add two slices of crispy bacon on each patty and top with a slice of Irish cheddar to melt.

          Toast the Buns: While the burgers are cooking, place the toasted brioche buns on the grill or in a toaster to get a nice crispy edge.

            Assemble the Burgers: Spread the homemade or store-bought Irish stout sauce on the bottom half of each toasted brioche bun. Layer on the lettuce, followed by the grilled burger patty topped with bacon and melted cheese. Add slices of fresh tomato and finish with the top bun.
