1 lb (450g) boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch fresh ginger, grated

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

1/4 cup green onions, chopped (for garnish)

1 tablespoon sesame seeds (optional, for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the sweet chili sauce, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Whisk well to blend. Add the chicken pieces to the bowl and toss to coat. Let marinate for at least 30 minutes (or up to overnight in the refrigerator for deeper flavor).

    Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken pieces (reserve the excess marinade) in a single layer. Sear them for 5-7 minutes until they are browned on one side.

      Add the Marinade: Flip the chicken pieces and pour the remaining marinade into the skillet. Stir well to combine. Bring the mixture to a boil, then reduce the heat to medium-low. Cook for an additional 5-10 minutes, stirring occasionally, until the chicken is cooked through and the sauce thickens slightly.

        Season & Serve: Taste the sauce and season with salt and pepper as needed. Once cooked, remove from heat. Serve the sweet chili chicken over cooked rice or noodles and garnish with chopped green onions and sesame seeds if desired.
