Ingredients
  

4 boneless, skinless chicken breasts

2 tablespoons Italian seasoning

2 tablespoons olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium zucchini, sliced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 cup vegetable or chicken broth

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Season the Chicken: Rub the chicken breasts with Italian seasoning, salt, and pepper evenly on both sides.

    Heat the Skillet: In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and cook for 6-7 minutes on each side until they are golden brown and cooked through. Remove the chicken and set aside.

      Sauté Vegetables: In the same skillet, add the sliced bell peppers, zucchini, and minced garlic. Sauté for about 5-6 minutes until the vegetables are tender but still crisp.

        Add Tomatoes and Broth: Stir in the cherry tomatoes and pour in the chicken broth. Bring to a simmer, allowing the flavors to combine for about 3-4 minutes.

          Combine Chicken and Cheese: Return the cooked chicken breasts to the skillet. Sprinkle the grated Parmesan cheese on top and cover the skillet. Let it cook for another 3-4 minutes for the cheese to melt and the chicken to heat through.
