Ingredients
  

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 tsp salt

4 large eggs

1/2 tsp vanilla extract

Cooking oil (for frying)

Powdered sugar (for dusting)

Optional: Lemon zest or chocolate drizzle for garnish

Instructions
 

In a medium saucepan, combine the water, butter, and salt. Heat over medium until the butter melts and the mixture comes to a boil.

    Once boiling, add the flour all at once and stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat and let it cool for about 5 minutes.

      Stir in the eggs one at a time, mixing well after each addition. The dough should be smooth and glossy. Add vanilla extract and mix until combined.

        Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).

          Using a pastry bag fitted with a large star tip or a spoon, drop small rounds of dough (about the size of a golf ball) into the hot oil. Fry in batches, making sure not to overcrowd the pot.

            Cook the zeppole for about 3-4 minutes on each side, or until they are golden brown and puffed up.

              Remove with a slotted spoon and drain on paper towels.

                Dust with powdered sugar while still warm. Optionally, garnish with lemon zest or drizzle with chocolate for added flavor.
