Italian Sausage and Rice Skillet

Ingredients
  

1 lb Italian sausage (sweet or spicy, as preferred)

1 cup long-grain rice (white or brown)

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14 oz) diced tomatoes, with juices

2 cups chicken broth (or vegetable broth)

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

1 cup frozen peas

2 tablespoons olive oil

Fresh basil for garnish (optional)

Grated Parmesan cheese for serving (optional)

Instructions
 

Saut the Sausage: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the Italian sausage and cook until browned, breaking it up into smaller pieces with a wooden spoon, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Cook the Vegetables: In the same skillet, add chopped onion and bell pepper. Saut for about 3-4 minutes until they soften. Add the minced garlic and cook for another minute until fragrant.

      Add Rice and Spices: Stir in the rice, Italian seasoning, and paprika. Cook for 2-3 minutes, stirring frequently, allowing the rice to absorb some of the flavors.

        Combine Ingredients: Pour in the diced tomatoes (with juices) and chicken broth. Season with salt and pepper to taste. Bring the mixture to a simmer and then reduce the heat to low.

          Simmer the Skillet: Add the browned sausage back into the skillet, stirring to combine. Cover the skillet and let it cook for 15-20 minutes (for white rice) or 30-35 minutes (for brown rice), or until the rice is tender and has absorbed most of the liquid.

            Add Frozen Peas: In the last 5 minutes of cooking, stir in the frozen peas. Cover again and let continue to simmer until heated through.

              Serve: Once done, fluff the rice with a fork and garnish with fresh basil and grated Parmesan cheese, if desired.
