Italian Sausage and Rice Skillet Recipe

1 pound Italian sausage (mild or spicy, your choice)

1 cup long-grain rice (uncooked)

1 medium onion, diced

1 red bell pepper, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juice)

2 cups low-sodium chicken broth

1 cup frozen peas

2 teaspoons Italian seasoning

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil or parsley for garnish (optional)

Instructions
 

Brown the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, removing it from the casing if necessary. Cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Remove excess grease if needed.

    Sauté the Veggies: Add the diced onion and chopped red bell pepper to the skillet. Sauté until they are softened, about 5 minutes. Stir in the minced garlic and continue cooking for another minute until fragrant.

      Toast the Rice: Add the uncooked rice to the skillet, stirring to coat it with the oil and juices. Cook for about 2 minutes until the rice begins to lightly toast.

        Combine Ingredients: Pour in the diced tomatoes (with juice) and chicken broth. Stir in the Italian seasoning, red pepper flakes (if using), and season with salt and pepper to taste.

          Simmer: Cover the skillet and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 20 minutes or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

            Add Peas: Once the rice is cooked, stir in the frozen peas and cover again. Cook for an additional 5 minutes until the peas are heated through.

              Serve: Remove from heat and let it sit for a few minutes. Fluff the rice with a fork, garnish with fresh basil or parsley, and enjoy your delightful skillet meal!
