Italian Tortellini Pasta Salad

12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

1 cup black olives, pitted and sliced

1/4 cup fresh basil, chopped

1/2 cup mozzarella balls

1/3 cup balsamic vinaigrette

Salt and pepper to taste

1/4 tsp Italian seasoning

Instructions
 

Cook the cheese tortellini according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Transfer to a large mixing bowl.

    Add the cherry tomatoes, cucumber, bell pepper, red onion, black olives, and mozzarella balls to the bowl with the tortellini.

      In a separate small bowl, whisk together the balsamic vinaigrette, salt, pepper, and Italian seasoning.

        Pour the dressing over the tortellini and vegetables, then gently toss until everything is well coated.

          Stir in the fresh basil, and adjust seasoning if needed, adding more salt or pepper as desired.

            Cover and refrigerate the pasta salad for at least 30 minutes to let the flavors meld together.

              Serve chilled or at room temperature as a delightful side dish or light lunch.
