For the meatballs:

1 pound ground beef

1/2 pound ground pork

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

2 cloves garlic, minced

Salt and pepper to taste

For the soup:

8 cups chicken broth

2 cups fresh spinach, chopped

1 cup carrots, diced

1 cup celery, diced

1 cup acini di pepe or orzo pasta

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 tablespoon olive oil

zest of 1 lemon (optional)

Instructions
 

Prepare the Meatballs: In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix until well combined. Roll the mixture into small meatballs, about 1 inch in diameter.

    Brown the Meatballs: In a large pot over medium heat, add olive oil. Once hot, add the meatballs in batches, cooking until browned on all sides (about 5-7 minutes). Remove the meatballs and set them aside.

      Sauté the Vegetables: In the same pot, add the diced carrots and celery. Sauté for about 5-6 minutes until they start to soften.

        Prepare the Broth: Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Bring to a gentle boil.

          Add the Pasta and Meatballs: Add the acini di pepe or orzo and the browned meatballs to the boiling broth. Reduce the heat and let it simmer for about 10 minutes, or until the pasta is al dente.

            Incorporate the Greens: Stir in the chopped spinach, dried oregano, dried basil, and season with salt and pepper. Cook for an additional 2-3 minutes until the spinach is wilted.

              Finish with Lemon: For a fresh finish, stir in the lemon zest if using, enhancing the flavor profile.
