Ingredients
  

4 cups green cabbage, finely shredded

1 cup carrots, grated

1 cup sweet corn (fresh, frozen, or canned)

2-3 jalapenos, finely chopped (adjust to taste)

1/2 cup red bell pepper, finely diced

1/4 cup red onion, finely chopped

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey or agave syrup

Salt and pepper to taste

Optional: 1/4 cup cilantro, chopped (for garnish)

Instructions
 

In a large mixing bowl, combine the shredded cabbage, grated carrots, sweet corn, chopped jalapenos, red bell pepper, and red onion. Toss gently to mix the vegetables evenly.

    In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth. Adjust the sweetness and seasoning as needed.

      Pour the dressing over the cabbage mixture and stir until all vegetables are well-coated.

        Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

          Before serving, give the coleslaw a good stir and sprinkle with chopped cilantro for an extra burst of flavor, if desired.
