4 boneless, skinless chicken breasts

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup diced jalapeños (fresh or pickled, seeds removed for less heat)

1/4 cup green onions, chopped

1/2 cup breadcrumbs (Panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking dish with cooking spray.

    Prepare Filling: In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until the mixture is well blended and set aside.

      Prepare Chicken Breasts: Place each chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to gently pound the chicken to about 1/2 inch thickness, being careful not to tear it.

        Stuff Chicken: Take a portion of the cheese and jalapeño mixture (about 1/4 cup) and place it in the center of each flattened chicken breast. Fold the sides over the filling and roll the chicken tightly to enclose the filling. Secure with toothpicks if necessary.

          Coat Chicken: In a shallow dish, spread out the breadcrumbs. Dip each stuffed chicken breast in olive oil, then roll it in the breadcrumbs until fully coated.

            Bake: Place the stuffed and coated chicken breasts in the greased baking dish. Drizzle a little extra olive oil on top for added crispiness. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the breadcrumbs are golden brown.

              Serve: Once done, remove the toothpicks, let the chicken rest for a few minutes, and then slice into pinwheels or serve whole. Garnish with additional sliced green onions if desired.
