Ingredients

1½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

1 cup crushed pineapple, drained (reserve juice)

½ teaspoon cinnamon

½ cup shredded coconut (optional)

1 cup powdered sugar

2 tablespoons pineapple juice (from reserved juice)

1 tablespoon milk

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Dry Ingredients: In a small bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Incorporate Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.

Fold in Pineapple and Coconut: Gently fold in the crushed pineapple and shredded coconut, if using, until evenly distributed.

Bake the Cake: Pour the batter into the prepared pan and smooth the top. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cake: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Prepare the Glaze: In a medium bowl, whisk together the powdered sugar, pineapple juice, and milk until smooth. Adjust the consistency as needed with more juice or powdered sugar.

Glaze the Cake: Once the cake is completely cool, drizzle the glaze over the top, allowing it to drip down the sides.

Serve: Slice and serve your delicious Juicy Pineapple Cake to your eager guests. Enjoy the tropical flavors!
