Ingredients
  

  • 2 cups cooked chicken breast shredded or diced
  • 0.5 cups mayonnaise preferably full-fat
  • 0.25 cups celery finely chopped
  • 0.25 cups red onion finely chopped
  • 0.5 cups cucumber diced
  • 1 tablespoon mustard Dijon or yellow
  • 1 teaspoon garlic powder for flavor
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper to taste
  • 1 tablespoon fresh parsley chopped, for garnish

Instructions
 

  • In a large mixing bowl, combine the shredded or diced cooked chicken breast with mayonnaise.
  • Add the finely chopped celery, red onion, and diced cucumber to the chicken and mayonnaise mixture.
  • Stir in the mustard, garlic powder, salt, and black pepper until all ingredients are well combined.
  • Taste the salad and adjust seasoning if necessary.
  • Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow flavors to meld.
  • Before serving, give the salad a good stir and garnish with fresh chopped parsley.

Notes

This salad can be stored in an airtight container in the refrigerator for up to 3 days. Serve on lettuce wraps or with keto-friendly crackers for a complete meal.
