Ingredients
  

2 ripe avocados, pitted and peeled

4 cups fresh spinach, washed and chopped

1 cup vegetable broth (low-sodium)

1 cup unsweetened coconut milk

1/2 cup diced onion

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon lime juice

Salt and pepper to taste

Optional garnishes: avocado slices, cilantro, and a sprinkle of chili flakes

Instructions
 

In a large saucepan, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic and sauté for an additional minute until fragrant.

      Pour in the vegetable broth and bring the mixture to a gentle simmer.

        Add the chopped spinach and cook for 2-3 minutes, just until wilted.

          Remove the pot from the heat and let it cool slightly. Then, transfer the mixture to a blender.

            Add the ripe avocados, coconut milk, lime juice, salt, and pepper to the blender. Blend on high until smooth and creamy.

              Taste and adjust seasoning as needed. If the soup is too thick, you can thin it out with a little more vegetable broth or water.

                Return the soup to the saucepan and reheat gently over low heat before serving.

                  Ladle the soup into bowls and garnish with avocado slices, cilantro, and chili flakes if desired.
