Ingredients
  

1 pound ground beef (80/20)

1 medium onion, diced

2 cloves garlic, minced

1 cup diced celery

1 cup diced bell peppers (any color)

1 medium zucchini, diced

1 (14.5 oz) can diced tomatoes, with juice

4 cups beef broth (low sodium)

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups fresh spinach or kale

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, avocado

Instructions
 

In a large pot over medium heat, add the olive oil. Once hot, add the diced onions and celery, sautéing until softened, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until browned, about 7-8 minutes. Drain excess fat if necessary.

        Mix in the diced bell peppers and zucchini, and cook for another 3-4 minutes until the vegetables are slightly tender.

          Pour in the diced tomatoes (with their juice) and beef broth. Stir in the Italian seasoning, smoked paprika, salt, and pepper.

            Bring the mixture to a boil, then reduce the heat to low and let simmer for 20-25 minutes, allowing the flavors to meld together.

              Just before serving, stir in the fresh spinach or kale until wilted.

                Taste and adjust seasoning if necessary.

                  Serve hot, garnished with your choice of optional toppings like shredded cheese, sour cream, or avocado.
