8 large zucchini or eggplant slices (about ¼ inch thick)

1 pound Italian sausage (bulk or casings removed)

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

½ cup grated Parmesan cheese

1 large egg

1 tablespoon Italian seasoning

2 cups marinara sauce (sugar-free)

Salt and pepper to taste

Fresh basil for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Zucchini Slices: Lay the zucchini (or eggplant) slices on a paper towel. Sprinkle lightly with salt and let them sit for about 15 minutes to draw out some moisture. Pat them dry with another paper towel.

      Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Cook, breaking it up with a spatula, until browned and fully cooked (about 5-7 minutes). Drain any excess grease if necessary, and set aside to cool slightly.

        Make the Filling: In a mixing bowl, combine the cooked sausage, ricotta cheese, ½ cup of the shredded mozzarella, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix until all ingredients are well combined.

          Assemble the Roll Ups: On a clean surface, take a zucchini slice and place a generous spoonful of the sausage filling at one end. Roll it up tightly, and then place the roll seam-side down in a baking dish. Repeat with remaining slices and filling.
