2 ripe avocados, peeled and pitted

4 cups fresh spinach leaves

1 cup vegetable broth (low sodium)

1 cup coconut milk (full-fat for creaminess)

1 clove garlic, minced

1 tablespoon olive oil

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add the fresh spinach to the pot and sauté until wilted, about 2-3 minutes.

      Reduce the heat to low, and add the vegetable broth, coconut milk, onion powder, garlic powder, salt, and pepper. Stir to combine.

        Allow the soup to simmer for 5-10 minutes until heated through.

          Carefully transfer the soup mixture to a blender. Add the avocados and lime juice. Blend until smooth and creamy. Adjust seasoning to your taste.

            Return the soup to the pot to warm it up again if needed.

              Serve hot, garnished with fresh cilantro.
