1 lb (450g) boneless, skinless chicken thighs, diced

2 cups mushrooms, sliced (button or cremini)

4 cloves garlic, minced

4 cups chicken broth (preferably low sodium)

1 cup heavy cream

1/2 cup Parmesan cheese, grated

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt, pepper, and half of the dried thyme and rosemary. Cook for about 5-7 minutes, until browned and cooked through. Remove the chicken from the pot and set aside.

    Cook the Vegetables: In the same pot, add the sliced mushrooms and minced garlic. Sauté for about 4-5 minutes, or until the mushrooms are tender and the garlic is fragrant.

      Combine Ingredients: Return the cooked chicken to the pot with the mushrooms. Pour in the chicken broth and bring to a simmer. Add the remaining thyme and rosemary, and let the mixture cook for about 10 minutes.

        Add Cream and Cheese: Lower the heat to a gentle simmer and stir in the heavy cream and Parmesan cheese. Mix well and let it cook for another 5 minutes, allowing the soup to thicken slightly.

          Serve: Taste and adjust seasoning with salt and pepper as needed. Ladle into bowls and garnish with fresh parsley before serving.
