Ingredients
  

1 lb kielbasa sausage, sliced into 1/2-inch rounds

4 medium potatoes, diced into 1-inch cubes

2 cups green beans, trimmed

1 red bell pepper, sliced

1 yellow onion, sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the diced potatoes, green beans, sliced red bell pepper, sliced onion, and minced garlic.

      Drizzle the olive oil over the vegetables, then sprinkle in the smoked paprika, dried oregano, salt, and pepper. Toss everything together until well-coated.

        Spread the seasoned vegetables evenly on a large baking sheet or pan.

          Place the sliced kielbasa on top of the vegetables, spreading it out evenly.

            Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the potatoes are tender and golden brown, and the kielbasa is heated through and nicely browned.

              Remove from the oven, garnish with fresh parsley, and serve hot.
