Ingredients

12 oz penne pasta

1 lb kielbasa sausage, sliced

1 red bell pepper, chopped

1 yellow onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 cup heavy cream

1 tsp dried oregano

1 tsp smoked paprika

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 cups shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Fresh basil for garnish (optional)

Instructions

Preheat your oven to 375°F (190°C).

Cook the penne pasta according to package instructions until al dente. Drain and set aside.

In a large skillet over medium heat, add the sliced kielbasa. Cook until browned, about 5-7 minutes. Remove and set aside.

In the same skillet, add the chopped bell pepper and onion. Sauté until the vegetables are tender, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Pour in the crushed tomatoes and heavy cream. Stir to combine. Add the oregano, smoked paprika, red pepper flakes (if using), and season with salt and pepper to taste. Let it simmer for about 5 minutes.

Add the cooked penne pasta and sausage back into the skillet. Mix everything until well combined.

Transfer the pasta mixture to a greased 9x13 inch baking dish. Top with shredded mozzarella and grated Parmesan cheese.

Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.

Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired before serving.
