1 pound kielbasa sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 medium bell pepper, diced (any color)

4 cups chicken broth

2 medium potatoes, diced

1 can (15 oz) diced tomatoes (with juices)

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

2 cups fresh spinach or kale, chopped

1 tablespoon olive oil

Salt, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, and sauté for about 3-4 minutes until it becomes translucent. Stir in the minced garlic and cook for another minute.

    Add the Kielbasa: Incorporate the sliced kielbasa sausage into the pot. Cook for 5-7 minutes, stirring occasionally, until the sausage is browned and fragrant.

      Cook the Veggies: Add the diced carrots, celery, and bell pepper to the pot. Stir everything together and cook for about 5 minutes until the vegetables start to soften.

        Add Liquid and Seasoning: Pour in the chicken broth and add the diced potatoes, diced tomatoes (with their juices), thyme, paprika, black pepper, and red pepper flakes (if using). Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the potatoes are tender.

            Add Greens: Stir in the chopped spinach or kale. Let it cook for an additional 5 minutes until the greens are wilted and tender.

              Taste and Adjust: Give the soup a taste and adjust the salt as necessary. If the soup is too thick, you can add a little more broth or water to reach your desired consistency.

                Serve: Ladle the soup into bowls, garnishing with freshly chopped parsley. Serve hot with crusty bread for dipping.
