Korean BBQ Meatballs with Spicy Mayo Dip

1 lb ground beef or pork (or a mix of both)

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 egg

2 tbsp soy sauce

1 tbsp brown sugar

1 tbsp sesame oil

1 tsp ginger, grated

1 tsp black pepper

1/2 tsp salt

1 tsp gochujang (Korean chili paste, adjust for heat preference)

Sesame seeds for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tbsp sriracha (or more to taste)

1 tsp lemon juice

Pinch of salt

1 tsp sesame oil

Optional: extra green onions for garnish

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef or pork, breadcrumbs, chopped green onions, minced garlic, egg, soy sauce, brown sugar, sesame oil, grated ginger, black pepper, salt, and gochujang. Mix until all ingredients are well combined but do not overmix.

    Form the Meatballs: Preheat your oven to 400°F (200°C). Using your hands, scoop out small portions of the meat mixture and roll them into meatballs, about 1 to 1.5 inches in diameter.

      Bake the Meatballs: Place the meatballs on a greased baking sheet or lined with parchment paper. Bake for about 15-20 minutes, or until the meatballs are cooked through and browned on the outside (internal temperature should be at least 160°F or 70°C).
