Ingredients
  

4 large chicken thighs (bone-in, skin-on)

4 large carrots, sliced

3 medium potatoes, cubed

2 bell peppers (any color), chopped

1 large onion, chopped

4 cloves garlic, minced

2 cups chicken broth

1 cup frozen peas

1 tbsp olive oil

1 tbsp dried thyme

1 tbsp dried rosemary

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. When the oil is hot, add the chicken thighs, skin side down, and sear for about 5 minutes until the skin is crispy. Flip and sear for an additional 5 minutes. Remove from skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the onions and garlic. Sauté for 2-3 minutes until they become translucent. Add sliced carrots and cubed potatoes, cooking for another 5 minutes.

        Combine Ingredients: In a large casserole dish, combine the sautéed vegetables, chopped bell peppers, thyme, rosemary, frozen peas, and chicken broth. Stir well to combine.

          Add Chicken: Nestle the seared chicken thighs on top of the vegetable mixture. If using, sprinkle shredded cheddar cheese over the chicken.

            Bake: Cover the casserole dish with foil and place it in the preheated oven. Bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the vegetables are tender.

              Serve and Garnish: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
