Ingredients
  

1 cup watermelon juice (freshly blended watermelon)

1 cup honeydew melon juice (freshly blended honeydew)

2 cups kiwi juice (freshly blended kiwi)

2 packets unflavored gelatin powder (for the jello layers)

1 cup water (divided)

2 tablespoons honey or agave syrup (optional, for sweetness)

Fresh kiwi slices (for garnish)

Mint leaves (for garnish)

Instructions
 

Prepare the Juices: Blend the watermelon, honeydew, and kiwis separately until smooth. Strain through a fine sieve to remove any pulp, if desired. Measure out 1 cup of each juice.

    Make Watermelon Jello Layer:

      - In a small saucepan, heat 1/2 cup of water until hot but not boiling.

        - Stir in 1 packet of gelatin and whisk until fully dissolved.

          - Add 1 cup of watermelon juice and honey (if using) to the mixture. Stir well.

            - Pour the mixture into clear cups, filling them about one-third of the way. Refrigerate until set, about 30 minutes.

              Make Honeydew Jello Layer:

                - Repeat the same process for the honeydew layer: heat another 1/2 cup water, dissolve the second packet of gelatin, mix in 1 cup of honeydew juice and honey (if using).

                  - After the watermelon layer has set, gently pour the honeydew mixture on top of the watermelon layer, filling the cups about halfway. Return to refrigerator and chill until set, about 30 minutes.

                    Make Kiwi Jello Layer:

                      - For the kiwi layer, again heat 1/2 cup of water, dissolve the gelatin, and mix in 1 cup of kiwi juice and honey (if using).

                        - Once the honeydew layer has set, carefully pour the kiwi mixture over it, filling the cups to the top. Refrigerate until fully set, approximately 1 hour.

                          Garnish and Serve:

                            - Once all layers are set, top each cup with a slice of fresh kiwi and a mint leaf for garnish.

                              - Serve chilled and enjoy the refreshing flavors!
